“🍵🍵🍂WELSH LEEK & POTATO SOUP🍵🍵🍂recipe below!
Very warming on a cold day like today in Cardiff!
3 tbs @filippoberio_uk olive oil
3 shallots, chopped evenly
1 clove of Garlic minced
2 @blas_y_tir Welsh leeks washed & cut evenly (keep green bits aside)
3 @blas_y_tir Rudolph Potatoes peeled & cut small
1 pint of Vegetable Stock
Seasoning- Salt, Pepper & lemon juice. (Helps bring out the flavours)
Sweat the shallots & garlic until soft, add the white parts of the leek & potatoes. Allow to cook for 2-3 mins stirring often. Add the stock & seasoning and simmer until the potatos is soft. Add the finely chopped green pieces of leek then blitz until smooth in my @ninjakitchenukNutrininja then served with @nutriseedukmacadamia nuts, walnuts, Himalayan Salt & pumpkin seeds. Parsley, Cayenne Pepper & a drizzle of @filippoberio_ukextra virgin olive oil🍵👌🏽”
“VEGAN BEER BATTER ‘FISH’ & CHIPS with MINTED MUSHY PEAS & TANGY KETCHUP 🇬🇧 🍺a British classic made vegan!
The ‘fish’ part is made from tofu & nori, coated in beer batter. Triple Cooked Chips made with @blas_y_tir Rudolph Potatoes. Served with Minted Pea, Lemon & a sprinkling of @nutriseedHimalayan Rock Salt.”
