The humble Cauliflower is riding a wave like never before. Food bloggers, chefs, celebrities and the media are praising the low-fat, no-carb, high-vitamin super-vegetable as the answer to all of our prayers. Cauliflower recipes are everywhere and as a food that can’t only solve our hunger, but actually tastes good too, we can’t complain…
Now, I’m not one to step away from the family favourite potato very often (I still enjoy piling up my roast potatoes on my Sunday roast and tucking into my bangers and mash on a weeknight) but I have to admit that I, myself have become a cauliflower convert. My eyes have been opened to the versatility of the humble cauliflower that was once just a side dish of cauliflower cheese on the kitchen table, and now I’m ready to share.
