Chicken, Chorizo & Potato Kebabs

Introduction:
These colourful kebabs are made using our nutty Pembrokeshire Earlies, chorizo, chicken, peppers and courgettes. They include 3 of your 5 a day and are a fun, summer meal for the whole family to enjoy!
Ingredients:
- 300 g Chicken Breast Mini Fillets
- 150 g Pembrokeshire Earlies
- 4 Courgettes, cut into 1.5cm discs
- 1 Red Pepper, roughly chopped
- 150 g Cooking Chorizo, cut into 2cm chunks
- 1 Garlic Clove, crushed
- 3 tsp Smoked Paprika
- 0.5 Lemon, juice only
- 1 tbsp Olive Oil
- Sea Salt & Ground Black Pepper, to season
Method
- Mix the marinade ingredients together and add the chicken, leave for 30 minutes.
- Boil the potatoes for 10-15 minutes or until cooked through.
- Skewer the ingredients : Potatoes, chorizo, chicken, courgette, pepper and repeat. Drizzle with oil, season and on to the BBQ for 5-7 minutes on each side.
