Simple Potato Salad

You can’t beat the classic potato salad. Our simple potato salad recipe uses both mayonnaise and a little low fat yogurt to create a light, creamy sauce. Enjoy as a side dish to a proper summer barbecue… come rain or shine!


  • 750 g Pembrokeshire Earlies, halved if large
  • 4 Blas y Tir Spring Onions, sliced
  • 100 g Low Fat Natural Yogurt
  • 2 tbsp Mayonnaise
  • 1 tbsp Fresh Chives, Mint or Parsley, chopped
  • Salt & Pepper, to season


  1. Boil the potatoes until tender, about 15-20 minutes.
  2. Mix the mayonnaise with the yogurt and add the spring onions and herbs.
  3. Add the potatoes whilst still warm to the herby mayonnaise mixture and season well.

Top Tip

If you’re looking for an even healthier version of this classic potato salad recipe, why not try changing the mayonnaise for a low fat option, or even replacing with creme fraiche!
