Spiced Cauliflower & Mint Neapolitan Pizza

This spiced cauliflower and mint pizza recipe from Pizza Pop-Up Restaurant Ffwrnes is tasty, creative and fun family meal. Topped with greek yogurt and vegetables instead of the usually cheese-laden versions, this pizza recipe is also a lighter option.

Ingredients

  • 1000 g '00' Flour, with a high gluten content
  • 2 g Fresh Baker's Yeast
  • 600ml Cold Water
  • 30 g Table Salt
  • 400 g Plum Tomatoes
  • 1 tsp Sea Salt
  • 400 g Cauliflower
  • 2 tbsp Sesame Oil
  • 1 tsp Chopped Dried Chilli's
  • 1 tsp Ground Cumin
  • Small bunch of Coriander
  • 1 Garlic Clove, crushed
  • 1 Ginger Root, thumb sized
  • 170 g Greek Yogurt
  • Bunch Fresh Mint, finely chopped
  • 0.5 Lemon, juiced

Method

  1. MAKING THE BASE: 1. Please visit our recipe for Creamy Leek & Potato Pizza for a full method of making the Neapolitan Pizza Base.
  2. THE SAUCE: 1. Blend the tomatoes and add the sea salt. (less is more for the base sauce).
  3. MAKING THE SPICED CAULIFLOWER: 1. Heat oil on oven proof tray. Add the dried chillies, ground cumin and ginger and cook off the spices. 2. Lower the heat and add the thinly sliced cauliflower. Toss the cauliflower in the spices, cover and roast on oven at 180°C for around 10-15 minutes, or until softened. 3. Sprinkle with finely chopped coriander.
  4. MAKING THE MINT RAITA: 1. Mix together the yogurt, mint and lemon. season to taste.
  5. COOKING THE NEAPOLITAN PIZZA: 1. Pre-heat the grill to its highest setting. 2. Heat a non-stick frying pan to high. 3. Take one of your stretched dough balls and lay it flat in the frying pan. 4. Spread a thin layer of tomato sauce onto the dough, leaving a couple of centimetres around the edge for the crust. Add the spiced cauliflower, mint raita and goats cheese. 5. Once the base of the pizza has browned (about 1-2 minutes), take the frying pan and place it on the highest shelf, under the grill. 6. Once the crust has taken on some colour (again about 1-2 minutes). 7. Garnish with sliced spring onions and pomegranate seeds… then tuck in!

Top Tip

We recommend making the dough for the pizza base 24 hours before to allow the flavour to develop!
