Whole Roasted Baby Spuds

Introduction:
Very simple, very Welsh! A light, crispy skin encasing a soft, creamy centre make these whole roasted Baby Spuds the most delicious side dish!
Ingredients:
- 750 g Baby Potatoes
- 2 tbsp Fresh Rosemary, roughly chopped
- 4 tbsp Olive Oil
- 2 tsp Coarse Sea Salt… we love Halen Mon!
Method
- Heat the oven to 200°C/fan 180°C/gas 6. Put the Baby potatoes in a roasting tin, cutting the larger ones in half. Pour over the olive oil and rub all over the potatoes until all are coated before sprinkling over the rosemary and sea salt.
- Roast for 40 minutes until tender and crisp and serve with a lovely rack of Welsh lamb. Perfection.
Top Tip
Fancy a spicy twist? Why not add a little paprika and chilli powder before popping these tasty spuds in the oven!
